Healthly vegan meals in 30 minutes or less

With more and more people trying out veganism, either for veganuary or for life, we’ve decided to put together a list of our favourite meals – all of which take less than 30 minutes to prepare and cook.


Scrambled tofu and mashed avocado

Serves 2

What you will need:

  • 1 block Tofu
  • 1/2 tsp Coriander
  • 1/2 tsp Cumin
  • 1/2 tsp Tumeric
  • pepper
  • Salt
  • Handful Mushrooms
  • 1 Tbsp Olive Oil
  • 1 avocado
  • 4 slices Rye Bread


  1. Mash the tofu
  2. Add the seasoning, and 1 tbsp olive oil and mix until the tofu is coated.
  3. Place a non stick pan over a medium heat, and heat the tofu and mushrooms through until cooked. This should only take a few minutes. make sure to keep moving it round the pan as it heats through.
  4. Remove from heat.
  5. Destone the avocado. Mash and layer over Rye Bread. Cover with the scrambled tofu and mushrooms and feel free to add any condiment of choice.


Cashew nut stir fry

What you will need:

  • 50g Cashew Nuts
  • 1tbsp olive oil
  • 1 red onion
  • 1 garlic clover
  • handful mushrooms
  • 1 red pepper sliced
  • 1 large carrot sliced
  • 1 bag spring greens
  • Handful bamboo shoots
  • tbsp Soy Sauce
  • 1 tsp Sweet Chilli Sauce
  • 1/2 tsp chilli flakes and cumin
  • Salt and Pepper


  1. Toast 50 g cashews over a medium high heat until browned. Add 1 tbsp olive oil and throw in your red onion and garlic. Cook for another 3 minutes.
  2. Add chopped mushroom, pepper, carrot, spring greens, and bamboo shoots. As well as soy sauce, chilli flakes, cumin and 1 tsp sweet chilli sauce. Cook for 5 minutes until slightly softened.
  3. Enjoy it as it is or add rice for a more filling meal.


Stuffing, veg, new potatoes and onion gravy

What you will need:

  • 1 pack stuffing
  • 80g per person frozen mixed veg
  • 2 red onions
  • Gravy Granules
  • Handful baby new potatoes per person


  1. Make the Stuffing according to packet instructions.
  2. When the stuffing has 15 minutes of baking left, place a pan on to Boil and clean a handful of new potatoes for each person. Once water is boiling cook on medium heat for 10 minutes.
  3. Whilst potatoes are boiling, in a saute pan add gravey granules and correct amount of water according to make. Add in 2 red onions and simmer for 5 minutes.
  4. Finally, place a second saucepan on the hob and fill 1/2 boil water and add 80g of frozen mixed veg per person. Cook for 5-7 minutes.
  5. Remove all from heat and plate up with stuffing.
